2 eggs
1/3 cup whipping cream
salt pepper
coconut oil
coconut flour
Instructions:
Preheat about an 1-2 inches of coconut oil in small pan on MEDUIM heat on stove top (below medium)
Mix 2 eggs, cream, and salt and pepper into small bowl
Put about a cup and 1/2 of coconut oil in separate container
Dip chicken tenders in egg mixture, then dip in flour mixture and then cook in oil for approximately between 4-5 minutes per side (cut open for doneness)
Challenges:
1. Even after putting salt in egg mixture, still does not taste salty
Solutions:
1. Try salt in flour mixture
2. Salt afterwards
Challenges:
2. To not burn coconut oil chicken needs to be cooked slowly but causes to be more greasy
Solutions:
1. Pre-cook chicken next time, then fry at higher level to be less greasy and more golden brown
